Course description

Learn the fundamentals of Thai Fruit Carving in Sydney.

An elegant tradition in Thai cuisine, fruit carving is the art of creating edible sculptures for fruit platters, display or garnish. It’s a low waste, low cost food art that brings fresh colour and impressive form to your entertaining table.

Just a few low-cost tools – with some basic skills and practice – and tomatoes become roses, cucumbers bloom into lilies or a melon is transformed into a lotus flower centrepiece.

Join this fun and fruit single day course to learn the fundamentals of fruit carving. You’ll receive a kit of tools to take home – and with the time to practice between each class, you will enjoy real learning outcomes and skills developed by the end of the course.

Suitable for…

This course is suitable for beginners.

Please note: students should have good dexterity and confidence using small hand tools and sharp knives.

Course content
  • An introduction to the fruit carving tradition
  • Get to grips with the knives and other tools, plus holding fruit and vegetables safely
  • Selection of fruit and vegetables best suited for carving
  • Techniques to carve simple flower, leaf and basket designs
  • Form and colour composition for platters and garnishes

Here is an example of the designs we will create:

  • Cucumber basket, leaf and lily
  • Pumpkin rose, carnation and dahlia
  • Tomato rose
  • Carrot leaves and flowers
  • Radish rose and other flowers

Please note: this is an art that can take years of learning and practice to perfect. Outcomes will vary depending on students' existing knife skills and dexterity, but everyone will take away the basic techniques and tools to continue learning.

Materials provided

All ingredients and tools are provided, but please bring reusable food containers to take your creations home.

Please come prepared
  • Bring an apron
  • Bring food containers for leftovers
  • Wear closed in shoes
  • If you have long hair, tie it back
