Learn to cook traditional Italian fresh pasta – egg-free and dairy-free.

You may have left behind the eggs and cheese, but you can still enjoy authentic pasta dishes.

Join this workshop – with Italian chef (and vego) Alessio – to learn all about pasta and how to make it using only vegan ingredients and ethical food practices. First, nail the basic dough. Then (and here’s where you’ll wish you had more hands) work it through a traditional pasta machine, just like Nonna, to create fettuccine, ravioli and more.

You’ll pick up some hands-on techniques as you learn how to roll, flavour and cut different styles of pasta. But it gets really tasty when you roll out some ravioli to stuff with gorgeous vegan fillings.

This class is perfect for beginners and home cooks who want to increase their skills and knowledge of pasta and vegan cooking.

Course content
  • Step-by-step discussion of the recipes for the workshop
  • How to make a basic vegan pasta dough
  • How to work with the dough and a hand pasta machine to roll and cut different styles of pasta
  • How to colour your pasta dough with natural ingredients
  • How to prepare vegan fillings for two ravioli dishes.

Your tutor Alessio Angione is an Italian-born chef, who lives the vegan lifestyle himself. Alessio’s company, GoGoVego, produces artisanal pastas using only wholesome plant-based ingredients.

On the day...
  • We’ve cut out disposable plastics, so please bring your own food containers to take any leftovers home
  • All participants must wear closed-in shoes – no high heels please!
  • Aprons supplied, but dress appropriately for the kitchen, and tie back long hair
  • Arrive up to 15 minutes before the class start time
